  • 1 lb cavatappi pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp blackening seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Cook the Pasta:
    Cook the cavatappi pasta according to package instructions. Drain and set aside.
  • Season the Shrimp:
    Season the shrimp with blackening seasoning.
  • Cook the Shrimp:
    In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
  • Cook the Vegetables:
    In the same skillet, add the diced bell peppers, onion, and minced garlic. Cook until the vegetables are tender, about 3-5 minutes.
  • Make the Sauce:
    Stir in the heavy cream and chicken broth. Bring to a simmer and cook for 3-5 minutes, letting the sauce thicken slightly.
  • Add the Parmesan:
    Add the grated Parmesan cheese and stir until the sauce is smooth and creamy.
  • Combine:
    Add the cooked cavatappi pasta to the skillet and toss to coat with the creamy sauce. Stir in the cooked shrimp.
  • Season and Garnish:
    Taste and season with salt and pepper as needed. Garnish with fresh chopped parsley.
