Ingredients
Scale
- 2 boneless, skinless chicken breasts (sliced into thin strips)
- 8 oz noodles (egg noodles, soba, or rice noodles work well)
- 1 tbsp olive oil (for cooking)
- 1 small onion (sliced)
- 1 bell pepper (sliced)
- 1 medium carrot (julienned or thinly sliced)
- 1/2 cup snap peas (optional)
For the Teriyaki Sauce:
- 1/4 cup soy sauce (low-sodium recommended)
- 2 tbsp honey or brown sugar
- 2 tbsp rice vinegar (or apple cider vinegar)
- 1 tbsp sesame oil
- 2 cloves garlic (minced)
- 1 tsp fresh ginger (grated)
- 1 tsp cornstarch mixed with 1 tbsp water (for thickening)
Optional Garnish:
- Sesame seeds
- Chopped green onions
- Red pepper flakes (for a little heat)
Instructions
- Cook the noodles:
- Cook the noodles according to package instructions. Drain and set aside.
- Prepare the teriyaki sauce:
- In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. In a separate small bowl, mix cornstarch and water to make a slurry. Stir this into the sauce to thicken it. Set the sauce aside.
- Cook the chicken:
- Heat 1 tbsp of olive oil in a large skillet or wok over medium-high heat. Add the sliced chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- Stir-fry the vegetables:
- In the same skillet, add a little more oil if needed, and sauté the onions, bell peppers, carrots, and snap peas for 3-4 minutes until they’re tender but still crisp.
- Combine everything:
- Return the cooked chicken to the skillet with the vegetables. Pour the teriyaki sauce over the chicken and vegetables, stirring to coat everything in the sauce. Allow it to simmer for 2-3 minutes until the sauce thickens slightly.
- Toss the noodles:
- Add the cooked noodles to the skillet and toss everything together until the noodles are well coated in the teriyaki sauce.
- Serve:
- Serve immediately, garnished with sesame seeds, chopped green onions, and red pepper flakes if desired.
Notes
- You can substitute the chicken with beef, shrimp, or tofu for a different variation.
- Add extra vegetables like mushrooms, zucchini, or broccoli to make the dish more hearty.
- For extra flavor, drizzle some additional sesame oil or sprinkle some crushed peanuts on top before serving.
