  • 75g lean smoked back bacon (diced)
  • 3½ cups low sodium chicken stock
  • 500g potato gnocchi (vacuum packed)
  • 1 shallot (finely diced)
  • 2 cloves garlic (minced)
  • ½ cup 2% milk
  • ½ tablespoon lemon juice
  • 175g Laughing Cow light cheese
  • ½ tablespoon cornstarch
  • 60g fresh grated cheddar
  • 1 teaspoon dried parsley
  • 1 teaspoon dried chives
  • 1 teaspoon onion powder
  • ½ teaspoon dried dill
  • ½ teaspoon garlic powder
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  • Cook the Chicken:
    • In a large skillet or pot, cook the chicken breasts over medium heat until browned and cooked through (about 6-7 minutes per side). Remove from the pan, let rest for a few minutes, and then slice or shred into bite-sized pieces.
  • Cook the Bacon:
    • In the same skillet, add the diced bacon and cook until crispy. Remove the bacon from the pan and set aside, leaving the bacon fat in the skillet.
  • Prepare the Gnocchi:
    • While the chicken and bacon cook, bring a large pot of water to a boil. Add the gnocchi and cook according to package instructions (usually 2-3 minutes). Once they float to the surface, drain and set aside.
  • Make the Sauce:
    • In the skillet with the bacon fat, add the diced shallot and minced garlic. Sauté for 2-3 minutes, until softened and fragrant.
    • Add the chicken stock to the skillet and bring to a simmer. Let the stock reduce for 5-7 minutes.
  • Add the Creaminess:
    • Stir in the milk, lemon juice, Laughing Cow light cheese, cornstarch, and grated cheddar. Mix well until the cheese has melted and the sauce is smooth and creamy.
  • Combine the Ingredients:
    • Add the cooked gnocchi, shredded chicken, crispy bacon, and seasonings (dried parsley, dried chives, onion powder, dried dill, garlic powder, salt, and pepper) to the skillet. Stir gently to coat everything in the creamy sauce. Let it cook for an additional 2-3 minutes to heat through.
  • Serve:
    • Once everything is well-combined and heated through, remove from the heat. Garnish with fresh parsley and serve immediately.

Notes

  • You can substitute the Laughing Cow cheese with any soft cheese you prefer, but it helps keep the sauce creamy and low-fat.
  • For extra richness, you can use whole milk or heavy cream instead of 2% milk.
