Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  • Add the beef, carrots, potatoes, and onion to the Crockpot.
  • Stir in the beef broth, tomato paste, thyme, salt, and pepper.
  • Cook on low for 7-8 hours until the beef is tender.

Notes

  • For a thicker stew, you can mix 1-2 tablespoons of cornstarch with water and add it towards the end of cooking.
  • You can also add peas or green beans during the last 30 minutes of cooking for added color and nutrition.
