- 2 lbs beef stew meat, cubed
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Add the beef, carrots, potatoes, and onion to the Crockpot.
- Stir in the beef broth, tomato paste, thyme, salt, and pepper.
- Cook on low for 7-8 hours until the beef is tender.
Notes
- For a thicker stew, you can mix 1-2 tablespoons of cornstarch with water and add it towards the end of cooking.
- You can also add peas or green beans during the last 30 minutes of cooking for added color and nutrition.
