Scale
For the Pastry:
- 1 sheet of vegan puff pastry (store-bought, thawed if frozen)
For the Cream Cheese Filling:
- 1/2 cup vegan cream cheese (such as Daiya or Tofutti)
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon non-dairy milk (almond, soy, oat, etc.)
For the Strawberry Topping:
- 1/2 cup fresh strawberries, sliced thinly
- 1 tablespoon maple syrup or agave (optional, for extra sweetness)
For the Glaze (optional):
- 1 tablespoon powdered sugar
- 1 teaspoon non-dairy milk
- 1/4 teaspoon vanilla extract
Instructions
Prepare the Cream Cheese Filling:
- In a bowl, combine the vegan cream cheese, powdered sugar, vanilla extract, and non-dairy milk.
- Use a hand mixer or whisk to beat the ingredients together until smooth and creamy. Set aside.
Prepare the Pastry:
- Preheat your oven to 400°F (200°C).
- Roll out the vegan puff pastry sheet on a floured surface.
- Cut the pastry into 4 equal squares or rectangles (depending on your preferred shape).
- Place each pastry piece on a baking sheet lined with parchment paper.
- Using a fork, lightly score a border about 1/2 inch from the edges of each square (this will allow the edges to puff up and create a “frame”).
Assemble the Danishes:
- Spread a spoonful of the cream cheese filling in the center of each pastry, leaving space along the edges.
- Top the cream cheese with thinly sliced strawberries.
- Optional: Drizzle a small amount of maple syrup or agave over the strawberries for extra sweetness.
Bake the Danishes:
- Bake the pastries in the preheated oven for 12-15 minutes, or until the puff pastry is golden and crisp around the edges.
- Once baked, remove from the oven and let cool for 5 minutes.
Make the Glaze (Optional):
- In a small bowl, mix together the powdered sugar, non-dairy milk, and vanilla extract until smooth.
- Drizzle the glaze over the top of the cooled danishes for a finishing touch.
To Serve:
- Serve the Easy Vegan Strawberry Danishes warm or at room temperature.
Notes
- You can substitute the strawberries with other fresh fruit like raspberries, blueberries, or blackberries.
- For a more decadent treat, you can add a sprinkle of crushed nuts (such as almonds or pecans) on top before baking.
- These danishes can be made ahead and stored in an airtight container at room temperature for 2-3 days.
