Description

This Egg Roll Stir Fry combines all the delicious flavors of an egg roll but in a healthier, quicker stir fry form. With ground meat, cabbage, carrots, and savory seasonings, it’s a tasty and satisfying dish perfect for busy weeknights!


Ingredients

  • 1 pound ground meat (chicken, turkey, or pork)
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 medium head of green cabbage, thinly sliced
  • 2 medium carrots, shredded
  • ¼ cup soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)

 

  • Optional: sesame seeds, for garnish

Instructions

  • Cook the Ground Meat:

    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the ground meat and cook, breaking it apart with a spoon, until browned and cooked through. Remove the meat from the pan and set aside.
  • Sauté the Vegetables:

    • In the same skillet, add the remaining 1 tablespoon of vegetable oil.
    • Add the chopped onion, garlic, and grated ginger. Sauté for about 2 minutes, or until the onion becomes soft and translucent.
  • Add the Cabbage and Carrots:

    • Stir in the thinly sliced cabbage and shredded carrots. Cook, stirring frequently, for about 5-7 minutes, or until the cabbage is tender but still slightly crisp.
  • Combine the Ingredients:

    • Add the cooked ground meat back into the skillet with the vegetables.
    • Stir in the soy sauce, sesame oil, rice vinegar, and crushed red pepper flakes (if using). Mix well and cook for an additional 2-3 minutes until everything is well combined and heated through.

 

  • Serve:

    • Remove from heat and garnish with sliced green onions and sesame seeds, if desired. Serve immediately.

  • Ground Meat Options: Feel free to use ground chicken, turkey, or pork, depending on your preference or what you have on hand.
  • Make it Spicy: If you enjoy spice, you can add more crushed red pepper flakes or a splash of hot sauce to heat it up.
