Description

These Garlic Parmesan Chicken Meatloaves are tender, juicy, and packed with flavor. Made with ground chicken, garlic, and Parmesan cheese, they are the perfect individual servings for a family-friendly dinner. Served with a side of vegetables or mashed potatoes, this dish is a satisfying meal!

  • 1 lb Ground chicken
  • 1/2 cup Breadcrumbs (preferably panko)
  • 1/4 cup Grated Parmesan cheese
  • 1/4 cup Milk
  • 2 cloves Garlic, minced
  • 1/4 cup Fresh parsley, chopped (plus extra for garnish)
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1 large Egg
  • 1 tbsp Olive oil (for greasing or brushing)

For the garlic butter sauce:

  • 2 tbsp Butter
  • 2 cloves Garlic, minced
  • 1/4 cup Grated Parmesan cheese
  • 1 tbsp Fresh parsley, chopped

Instructions

  • Preheat oven:
    Preheat the oven to 375°F (190°C). Lightly grease a baking dish or line a baking sheet with parchment paper.

  • Prepare the meatloaf mixture:
    In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, milk, minced garlic, fresh parsley, onion powder, garlic powder, salt, pepper, and egg. Mix gently until everything is well combined, but avoid overmixing to keep the meatloaf tender.

  • Form the meatloaves:
    Divide the meat mixture into 4 equal portions. Shape each portion into a small loaf and place them on the prepared baking sheet or in a baking dish.

  • Bake the meatloaves:
    Bake the mini meatloaves in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and they are golden brown on top.

  • Make the garlic butter sauce:
    While the meatloaves are baking, melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat and stir in the grated Parmesan cheese and fresh parsley.

  • Serve:
    Once the meatloaves are done, drizzle the garlic butter sauce over the top of each meatloaf. Garnish with extra fresh parsley and serve warm with your favorite sides.

Notes

  • If you prefer, you can substitute ground turkey for the chicken.
  • You can make these meatloaves ahead of time and freeze them for later. Just bake them first, let them cool, and then freeze. Reheat them in the oven when ready to serve.
  • For a crispy crust, broil the meatloaves for the last 2-3 minutes of baking.
