Ingredients

- 1 teaspoon dried thyme (or fresh thyme, chopped)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
- 1 tablespoon grated Parmesan cheese (optional, for added flavor)

Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking. -
Prepare the Potatoes:
Wash and scrub the potatoes well. Cut them into halves or quarters, depending on their size. Aim for uniform pieces to ensure even cooking. -
Season the Potatoes:
In a large bowl, toss the potato pieces with olive oil, minced garlic, rosemary, thyme, salt, and black pepper. Make sure the potatoes are evenly coated with the seasoning. -
Roast the Potatoes:
Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 30-40 minutes, or until the potatoes are golden and crispy on the edges, flipping them halfway through to ensure even roasting.

Notes
- For extra crispy potatoes, you can parboil the potatoes for 5-10 minutes before roasting. This softens them slightly and makes them crisp up even more in the oven.
