Instructions
- Prepare the potatoes: Wash and peel the russet potatoes. Cut them into thin fries (about ¼-inch thick) and place them in a large bowl of cold water to soak for at least 30 minutes (this helps to remove excess starch for crispier fries).
- Heat the oil: In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). You’ll need enough oil to submerge the fries.
- Make the batter: In a shallow dish, whisk together the flour, Cajun seasoning, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using). Dip the soaked and drained fries into the buttermilk, then dredge them in the flour mixture, making sure each fry is well-coated.
