For the Fries:
- 4 large russet potatoes, peeled and cut into fries

- Salt and pepper, to taste
For the Voodoo Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon hot sauce (such as Tabasco or Louisiana hot sauce)
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sugar
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- Salt and pepper, to taste
For Garnish (optional):
- Fresh parsley, chopped
- Sliced green onions
- Crumbled bacon (optional)
- Grated parmesan (optional)
Instructions
For the Fries:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Place the cut potatoes in a large bowl and toss them with vegetable oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper until evenly coated.
- Spread the fries in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes, flipping the fries halfway through, until they are golden and crispy.
- Once baked, remove from the oven and set aside while you prepare the voodoo sauce.
For the Voodoo Sauce:
- In a small bowl, whisk together mayonnaise, ketchup, hot sauce, smoked paprika, garlic powder, onion powder, sugar, lemon juice, Dijon mustard, cayenne pepper (if using), salt, and pepper until smooth and well combined.
- Taste and adjust seasoning, adding more hot sauce for heat or sugar for sweetness if desired.
To Serve:
- Arrange the crispy fries on a serving platter or plate.
- Drizzle the voodoo sauce generously over the fries or serve it on the side for dipping.
- Garnish with fresh parsley, sliced green onions, crumbled bacon, or grated parmesan if desired.
Notes
- Adjust the heat level by adding more or less cayenne pepper and hot sauce in the voodoo sauce.
- For an even crispier texture, you can fry the potatoes instead of baking them, but baking is a healthier option.
