Ingredients
- 1 lb (450g) sausage (Italian sausage, kielbasa, or smoked sausage work well)
- 1 tablespoon olive oil (if using lean sausage, otherwise you can skip this)
- 1 small onion, diced
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 1/2 cups long-grain white rice
- 3 cups chicken broth (or water)
- 1 teaspoon paprika (smoked paprika if you like extra smokiness)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon thyme
- Salt and pepper, to taste
- 1/2 cup frozen peas (optional, for color and texture)
- Fresh parsley, chopped (for garnish)

Cook the Sausage:
In a large skillet or pan, heat the olive oil over medium-high heat. If using a sausage casing, remove the casing and crumble the sausage. Add the sausage to the pan and cook until browned and cooked through, breaking it up into smaller pieces as it cooks (about 7-10 minutes). Once the sausage is cooked, remove it from the skillet and set aside. -
Sauté the Vegetables:
In the same skillet, add the diced onion, bell pepper, and garlic. Cook for 3-4 minutes, or until softened and fragrant. -
Add the Rice:
Add the rice to the skillet and stir to combine with the vegetables. Let the rice toast lightly in the pan for 2 minutes, stirring occasionally. -
Cook the Rice:
Add the chicken broth, paprika, oregano, thyme, salt, and pepper to the skillet. Stir everything to combine, then bring the mixture to a boil. Once it’s boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed. Avoid lifting the lid while cooking to ensure the rice cooks evenly. -
Add the Sausage and Peas:
Once the rice is cooked, add the cooked sausage back into the skillet. Stir in the frozen peas (if using), then cover the skillet again and cook for an additional 3-4 minutes until the peas are heated through.
