  • 1/2 cup (120g) warm water
  • 1/4 cup (50g) sugar
  • 2 cups (240g) bread flour
  • 1/2 cup (60g) cocoa powder
  • 1 teaspoon salt
  • 1/2 cup (100g) semi-sweet chocolate chips or chopped chocolate
  • 2 tablespoons butter, softened
  • 1 egg (optional, for extra richness)
  • 1/4 cup (60ml) milk or buttermilk
  • 1 teaspoon vanilla extract

Instructions

  • Prepare the Dough:
    • In a large mixing bowl, combine sourdough starter, warm water, and sugar. Stir until the sugar dissolves.
    • Add bread flour, cocoa powder, and salt. Mix until combined.
    • Knead the dough for about 10-12 minutes until it becomes smooth and elastic. Add more flour if needed to prevent it from sticking.
  • Add Chocolate Chips:
    • Gently fold in the chocolate chips or chopped chocolate and butter until evenly distributed.
  • First Rise:
    • Shape the dough into a ball and place it in a lightly greased bowl. Cover and let it rise in a warm place for 4-6 hours or until doubled in size.
  • Shape the Loaf:
    • After the first rise, punch down the dough and shape it into a loaf. Place it in a greased loaf pan or shape it into a round boule for free-form baking.
  • Second Rise:
    • Allow the dough to rise for another 1-2 hours.
  • Bake the Bread:
    • Preheat your oven to 375°F (190°C).
    • Bake for 30-40 minutes, or until the top is firm and a skewer inserted comes out clean. If using a loaf pan, you may need an additional 10 minutes of baking time.
  • Cool:
    • Let the bread cool completely on a wire rack before slicing.
