- 1/2 cup (120g) warm water
- 1/4 cup (50g) sugar
- 2 cups (240g) bread flour
- 1/2 cup (60g) cocoa powder
- 1 teaspoon salt
- 1/2 cup (100g) semi-sweet chocolate chips or chopped chocolate
- 2 tablespoons butter, softened
- 1 egg (optional, for extra richness)
- 1/4 cup (60ml) milk or buttermilk
- 1 teaspoon vanilla extract
Instructions
- Prepare the Dough:
- In a large mixing bowl, combine sourdough starter, warm water, and sugar. Stir until the sugar dissolves.
- Add bread flour, cocoa powder, and salt. Mix until combined.
- Knead the dough for about 10-12 minutes until it becomes smooth and elastic. Add more flour if needed to prevent it from sticking.
- Add Chocolate Chips:
- Gently fold in the chocolate chips or chopped chocolate and butter until evenly distributed.
- First Rise:
- Shape the dough into a ball and place it in a lightly greased bowl. Cover and let it rise in a warm place for 4-6 hours or until doubled in size.
- Shape the Loaf:
- After the first rise, punch down the dough and shape it into a loaf. Place it in a greased loaf pan or shape it into a round boule for free-form baking.
- Second Rise:
- Allow the dough to rise for another 1-2 hours.
- Bake the Bread:
- Preheat your oven to 375°F (190°C).
- Bake for 30-40 minutes, or until the top is firm and a skewer inserted comes out clean. If using a loaf pan, you may need an additional 10 minutes of baking time.
- Cool:
- Let the bread cool completely on a wire rack before slicing.

- For a more intense chocolate flavor, use dark chocolate chips or chopped chocolate.
- This bread can be stored in an airtight container for 3-4 days.
