Ingredients
Scale
- 1 loaf of baguette (or any crusty bread)
- 2 cups cherry tomatoes, halved
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 1 teaspoon garlic, finely minced
- 2 tablespoons fresh basil, chopped
- Salt and pepper, to taste
- Balsamic glaze (for drizzling)
- 1 tablespoon olive oil (for brushing the bread)
Instructions
- Prepare the Bread: Preheat your oven to 375°F (190°C). Slice the baguette into 1-inch thick pieces. Using a heart-shaped cookie cutter, cut out heart shapes from each slice of bread.
- Toast the Bread: Brush both sides of the heart-shaped bread slices with olive oil and place them on a baking sheet. Toast them in the oven for about 5-7 minutes, or until golden brown and crispy. Keep an eye on them so they don’t burn.
- Prepare the Tomato Mixture: While the bread is toasting, combine the halved cherry tomatoes, minced garlic, balsamic vinegar, and chopped basil in a bowl. Stir gently and season with salt and pepper to taste.
- Assemble the Bruschetta: Once the heart-shaped toasts are done, remove them from the oven and allow them to cool slightly. Spoon a generous amount of the tomato mixture onto each heart-shaped toast.
- Finish and Serve: Drizzle with balsamic glaze for an extra touch of sweetness and flavor. Serve immediately and enjoy!
Notes
- For an extra creamy twist, you can add a small dollop of ricotta or goat cheese on top of the bread before adding the tomato mixture.
- You can make this a day ahead and store the tomato mixture in the fridge. Just assemble the bruschetta before serving to keep the bread crispy.
- If you don’t have a heart-shaped cookie cutter, you can simply cut the bread into squares or rounds, or use any fun shape you prefer.
