Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Roll out the puff pastry and cut it into squares.
  • Place a spoonful of lemon curd in the center of each square.
  • Fold the corners of the pastry over the filling, creating a pinwheel shape.
  • Brush the pastries with the beaten egg.
  • Bake in the preheated oven for 15-20 minutes, or until golden brown.
