Description

Start your day off right with these crispy, cheesy Egg and Sausage Breakfast Taquitos! Filled with flavorful sausage, scrambled eggs, spinach, and a touch of heat from jalapeños, these taquitos are easy to make and perfect for breakfast or brunch. They’re crispy on the outside, soft and savory on the inside, and can even be made ahead for meal prep!

  • 1 pkg Mulay’s breakfast sausage (or your preferred sausage)

  • 1 jalapeno, seeded & diced

  • 4 oz baby spinach (about 3 large handfuls)

  • 6 eggs

  • 1/4 cup milk

  • 1/2 tsp salt

  • 12 cups shredded cheese (depending on how cheesy you like it)

  • 12 corn tortillas

  • Spray oil (for greasing)


Instructions

  • Cook the sausage: In a large skillet, crumble and cook the sausage over medium heat until browned and fully cooked. Remove from skillet and set aside.

  • Sauté the vegetables: In the same skillet, add diced jalapeno and cook for 1–2 minutes. Add spinach and sauté until wilted, about 2 minutes.

  • Scramble the eggs: In a bowl, whisk together eggs, milk, and salt. Pour the mixture into the skillet with the vegetables and cook, stirring occasionally, until eggs are scrambled and cooked through.

  • Combine sausage and eggs: Add the cooked sausage back to the skillet with the eggs and vegetables. Stir to combine, then remove from heat.

  • Assemble the taquitos: Preheat the oven to 400°F (200°C). Heat the corn tortillas in the microwave or on a skillet for 20-30 seconds to make them more pliable. Spoon a generous amount of the egg, sausage, and spinach mixture onto the center of each tortilla. Top with shredded cheese.

  • Roll and bake: Roll up each tortilla tightly and place seam-side down on a baking sheet. Lightly spray the taquitos with oil to help them crisp up.

  • Bake for 15–20 minutes or until the taquitos are golden and crispy. Serve with salsa or guacamole.

Notes

For extra flavor, you can add a sprinkle of cumin or paprika to the egg mixture.

You can make these ahead and freeze them before baking for a convenient grab-and-go breakfast.

Feel free to substitute flour tortillas if preferred, though corn tortillas will give a more authentic taste.
