Ingredients
Scale
- For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- For the cheesecake filling:
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/4 cup sour cream
- 1/4 cup heavy cream
- For the red berry topping:
- 2 cups mixed red berries (strawberries, raspberries, blackberries, blueberries)
- 1/4 cup granulated sugar
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
Instructions
- Prepare the Crust:
- Preheat the oven to 325°F (160°C).
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 8-10 minutes, then remove from the oven and allow to cool while you prepare the filling.
- Prepare the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
- Add the sugar and vanilla extract, and beat until combined.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the sour cream and heavy cream until the filling is smooth and creamy.
- Bake the Cheesecake:
- Pour the cheesecake batter over the cooled graham cracker crust.
- Smooth the top with a spatula.
- Bake for 50-60 minutes, or until the edges are set, and the center is slightly jiggly.
- Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
- After the cheesecake has cooled to room temperature, refrigerate it for at least 4 hours or overnight for best results.
- Prepare the Berry Topping:
- In a small saucepan, combine the mixed berries, sugar, lemon juice, and vanilla extract.
- Cook over medium heat, stirring occasionally, until the berries break down and form a syrup, about 10 minutes.
- Remove from the heat and let the berry sauce cool to room temperature.
- Assemble the Cheesecake:
- Once the cheesecake has chilled, spread the berry topping evenly over the top.
- If desired, garnish with fresh whole berries for an added touch of freshness.
- Serve:
- Slice and serve the Cheesecake de Frutos Rojos chilled, and enjoy!
