Ingredients

Scale
  • For the crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted
  • For the cheesecake filling:
    • 3 packages (8 oz each) cream cheese, softened
    • 1 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 3 large eggs
    • 1/4 cup sour cream
    • 1/4 cup heavy cream
  • For the red berry topping:
    • 2 cups mixed red berries (strawberries, raspberries, blackberries, blueberries)
    • 1/4 cup granulated sugar
    • 2 tablespoons lemon juice
    • 1 teaspoon vanilla extract

Instructions

  • Prepare the Crust:
    • Preheat the oven to 325°F (160°C).
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
    • Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 8-10 minutes, then remove from the oven and allow to cool while you prepare the filling.
  • Prepare the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
    • Add the sugar and vanilla extract, and beat until combined.
    • Add the eggs one at a time, mixing well after each addition.
    • Mix in the sour cream and heavy cream until the filling is smooth and creamy.
  • Bake the Cheesecake:
    • Pour the cheesecake batter over the cooled graham cracker crust.
    • Smooth the top with a spatula.
    • Bake for 50-60 minutes, or until the edges are set, and the center is slightly jiggly.
    • Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
    • After the cheesecake has cooled to room temperature, refrigerate it for at least 4 hours or overnight for best results.
  • Prepare the Berry Topping:
    • In a small saucepan, combine the mixed berries, sugar, lemon juice, and vanilla extract.
    • Cook over medium heat, stirring occasionally, until the berries break down and form a syrup, about 10 minutes.
    • Remove from the heat and let the berry sauce cool to room temperature.
  • Assemble the Cheesecake:
    • Once the cheesecake has chilled, spread the berry topping evenly over the top.
    • If desired, garnish with fresh whole berries for an added touch of freshness.
  • Serve:
    • Slice and serve the Cheesecake de Frutos Rojos chilled, and enjoy!

Notes

  • You can use a variety of berries, such as strawberries, raspberries, blueberries, or blackberries, depending on what is available.
