  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1 cup chocolate chips
  • 1 can cherry pie filling

Instructions

  • Preheat oven to 325°F (165°C).
  • Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  • In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the chocolate chips, then pour the cheesecake mixture over the prepared crust.
  • Bake for 55-60 minutes or until the center is almost set.
  • Cool the cheesecake on a wire rack for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake from the sides.
  • Refrigerate for at least 4 hours to set.
  • Before serving, top with the cherry pie filling

Notes

  • For a more decadent topping, you can drizzle hot fudge sauce over the cherry filling.
  • This cheesecake can be made a day ahead for easier preparation.
