- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 4 eggs
- 1 cup chocolate chips
- 1 can cherry pie filling
Instructions
- Preheat oven to 325°F (165°C).
- Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the chocolate chips, then pour the cheesecake mixture over the prepared crust.
- Bake for 55-60 minutes or until the center is almost set.
- Cool the cheesecake on a wire rack for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake from the sides.
- Refrigerate for at least 4 hours to set.
- Before serving, top with the cherry pie filling
Notes
- For a more decadent topping, you can drizzle hot fudge sauce over the cherry filling.
- This cheesecake can be made a day ahead for easier preparation.
- If you prefer a firmer crust, bake it for 5-10 minutes before adding the cheesecake mixture.
