  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1/2 cup chocolate chip cookie dough (store-bought or homemade)
  • Butter or oil for cooking

Instructions

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together buttermilk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. (It’s okay if the batter is a bit lumpy.)
  • Heat a skillet or griddle over medium heat and add a small amount of butter or oil to prevent sticking.
  • Pour a small amount of pancake batter onto the skillet. Place a spoonful of cookie dough in the center of each pancake.
  • Top with more pancake batter to completely cover the cookie dough.
  • Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown and cooked through on both sides.
  • Serve warm with syrup, whipped cream, or extra chocolate chips if desired.

Notes

  • You can use store-bought cookie dough or make your own. Just ensure it’s chilled before using to make it easier to handle.
