- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk
- 1 large egg
- 2 tbsp unsalted butter, melted
- 1/2 cup chocolate chip cookie dough (store-bought or homemade)
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. (It’s okay if the batter is a bit lumpy.)
- Heat a skillet or griddle over medium heat and add a small amount of butter or oil to prevent sticking.
- Pour a small amount of pancake batter onto the skillet. Place a spoonful of cookie dough in the center of each pancake.
- Top with more pancake batter to completely cover the cookie dough.
- Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown and cooked through on both sides.
- Serve warm with syrup, whipped cream, or extra chocolate chips if desired.
Notes
- You can use store-bought cookie dough or make your own. Just ensure it’s chilled before using to make it easier to handle.
- Feel free to add chocolate chips to the pancake batter for extra chocolatey goodness.
- Top with powdered sugar, syrup, or even a scoop of vanilla ice cream for an indulgent treat.
