  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg, separated
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 1/4 cups pecans, finely chopped
  • 14 soft caramel candies, unwrapped
  • 3 tablespoons heavy cream

Instructions

  • Preheat oven: Set the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Prepare dry ingredients: In a medium bowl, whisk together the flour, cocoa powder, and salt.
  • Cream butter and sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  • Mix wet ingredients: Add the egg yolk, milk, and vanilla extract to the butter mixture. Mix well to combine.
  • Combine wet and dry: Gradually add the flour mixture to the wet ingredients, stirring until well combined.
  • Whisk egg white: In a small bowl, whisk the egg white until frothy.
  • Shape and coat dough: Roll the dough into 1-inch balls. Dip each ball in the egg white, then roll in the chopped pecans.
  • Prepare for baking: Place the coated dough balls 2 inches apart on the prepared baking sheets. Press an indentation in the center of each cookie.
  • Bake: Bake for 10-12 minutes, or until the cookies are set. Remove from the oven.
  • Make caramel filling: While the cookies are baking, melt the caramel candies and heavy cream in a saucepan over low heat, stirring until smooth.
  • Fill cookies: Once the cookies are done baking, remove them from the oven and press the indentations back down. Spoon the caramel mixture into each indentation.
  • Cool and serve: Allow the cookies to cool completely on the baking sheets before serving.

Notes

  • If you prefer a thicker caramel filling, you can reduce the amount of heavy cream.
  • For extra richness, drizzle some melted chocolate over the finished cookies.
