Instructions
- Preheat the oven to 325°F (165°C).
- In a medium bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the cream cheese and 1 cup sugar until smooth and creamy. Add eggs one at a time, beating well after each addition. Stir in 1 teaspoon vanilla extract and salt. Pour this mixture over the prepared crust.
- Bake in the preheated oven for 55 minutes, or until the cheesecake is set and slightly golden on top. Allow it to cool.
- In a small bowl, combine sour cream, 1/4 cup sugar, and 1 teaspoon vanilla. Spread this mixture evenly over the top of the cheesecake.
- Return the cheesecake to the oven and bake for an additional 12 minutes.
- After baking, chill the cheesecake in the refrigerator before serving.
