  • 2 cups fresh peaches, peeled and sliced (or use canned peaches, drained)

  • 1/2 cup brown sugar (packed)

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup sour cream (or plain yogurt)

  • 1/2 teaspoon ground cinnamon (optional)

  • 1 tablespoon granulated sugar (for sprinkling on top)


Instructions

  • Preheat the Oven: Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan.

  • Prepare the Peach Topping: In a small bowl, toss the sliced peaches with 1/2 cup of brown sugar until well coated. Set aside to allow the sugar to draw out some of the juice from the peaches.

  • Make the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).

  • Cream Butter and Sugar: In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3 minutes.

  • Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract.

  • Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with sour cream, starting and ending with the dry ingredients. Mix until just combined.

  • Assemble the Cake: Pour the cake batter into the prepared pan and spread it evenly. Arrange the peach slices on top of the batter, including any syrupy juice from the peaches.

  • Bake: Sprinkle 1 tablespoon of granulated sugar over the top of the peaches. Bake in the preheated oven for 40-45 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.

 

  • Cool and Serve: Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Serve warm or at room temperature.

  • Fresh or Canned Peaches: Fresh peaches are ideal when in season, but canned peaches work as well (just be sure to drain them well).
