For the Cake:
- 200g dark chocolate, chopped
- 250g unsalted butter, cubed
- 1 1/2 cups caster sugar
- 3 large eggs
- 1 cup plain flour
- 1/4 cup cocoa powder
- 1/2 cup milk
For the Ganache:
- 200g dark chocolate, chopped
- 1/2 cup heavy cream
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- Make the Cake Batter:
- In a heatproof bowl, combine the chopped dark chocolate and cubed butter. Melt together over a double boiler or in the microwave, stirring every 30 seconds until smooth and fully melted.
- Once melted, remove the bowl from the heat and whisk in the caster sugar. Let the mixture cool for a few minutes before adding the eggs one at a time, beating well after each addition.
- Sift the plain flour and cocoa powder together into the mixture and fold gently until just combined.
- Stir in the milk until smooth.
- Bake the Cake:
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a skewer inserted into the center comes out with just a few moist crumbs (the cake will firm up as it cools).
- Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
- Make the Ganache:
- While the cake is cooling, make the ganache. In a heatproof bowl, combine the chopped dark chocolate and heavy cream. Microwave in 30-second bursts, stirring each time, until the chocolate is melted and smooth.
- Let the ganache cool slightly before pouring it over the cooled cake. Spread it evenly with a spatula.
- Serve:
- Allow the ganache to set for a few minutes before slicing the cake. Serve as is or with whipped cream or berries on the side for an extra treat.
