Ingredients
Scale
- 8 oz dark chocolate (finely chopped)
- ½ cup heavy cream
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- Cocoa powder (for rolling)
- Chopped nuts (optional, for coating)
- Sprinkles (optional, for coating)
- Sea salt (optional, for a savory touch)
Instructions
- Prepare the Ganache:
- Place the chopped dark chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (not boil).
- Pour the hot cream over the chocolate and let sit for 2-3 minutes. Stir until smooth and fully combined.
- Add the butter and vanilla extract to the mixture, stirring until the butter is melted and the ganache is glossy.
- Chill the Ganache:
- Allow the ganache to cool at room temperature for about 30 minutes. Then, cover and place in the fridge for 1-2 hours or until firm enough to scoop.
- Shape the Truffles:
- Once the ganache is firm, use a spoon or melon baller to scoop small portions of ganache. Roll them between your hands to form smooth balls.
- If the ganache gets too soft, refrigerate for 10-15 minutes to firm up before rolling.
- Coat the Truffles:
- Roll each truffle in your choice of cocoa powder, chopped nuts, or sprinkles to coat them completely. Optionally, sprinkle a little sea salt on top for a savory touch.
- Store and Serve:
- Store the truffles in an airtight container in the fridge for up to 2 weeks. Bring to room temperature before serving for the best texture.
Notes
- You can use any type of chocolate you like (milk, dark, or white) for the ganache, depending on your preference.
- For flavor variations, try adding a few drops of essential oils (like orange, mint, or lavender) to the ganache before refrigerating.
- Be careful not to overheat the cream when heating it, as it may curdle or burn.
