This Elegant Cherry Chocolate Ice Cream Cake combines rich chocolate ice cream and sweet cherry ice cream, layered on a crispy chocolate wafer crust. Finished with a chocolate drizzle and fresh cherry topping, it’s the perfect frozen dessert to impress at any occasion!


Ingredients

  • 1 pint cherry ice cream
  • 1 pint chocolate ice cream
  • 1 package chocolate wafer cookies
  • 1/2 cup melted butter
  • 1/4 cup chocolate chips
  • 1/4 cup chopped cherries

Instructions

  • Take the cherry ice cream out of the freezer and let it soften slightly.
  • In a food processor, crush the chocolate wafer cookies until they form fine crumbs. Add melted butter and pulse until combined.
  • Press the cookie mixture into the bottom of a springform pan to form the crust.
  • Spread the softened cherry ice cream over the cookie crust in an even layer. Freeze for 1 hour.
  • Take the chocolate ice cream out of the freezer and let it soften slightly.
  • Spread the softened chocolate ice cream over the cherry layer. Freeze for another hour.
  • In a small saucepan, melt the chocolate chips. Drizzle over the top of the cake and sprinkle with chopped cherries.
  • Freeze the cake for at least 4 hours or until firm.
  • Serve and enjoy!

  • For a more decadent topping, add whipped cream or additional chopped cherries before serving.
