- 1 pint cherry ice cream
- 1 pint chocolate ice cream
- 1 package chocolate wafer cookies
- 1/2 cup melted butter
- 1/4 cup chocolate chips
- 1/4 cup chopped cherries
Instructions
- Take the cherry ice cream out of the freezer and let it soften slightly.
- In a food processor, crush the chocolate wafer cookies until they form fine crumbs. Add melted butter and pulse until combined.
- Press the cookie mixture into the bottom of a springform pan to form the crust.
- Spread the softened cherry ice cream over the cookie crust in an even layer. Freeze for 1 hour.
- Take the chocolate ice cream out of the freezer and let it soften slightly.
- Spread the softened chocolate ice cream over the cherry layer. Freeze for another hour.
- In a small saucepan, melt the chocolate chips. Drizzle over the top of the cake and sprinkle with chopped cherries.
- Freeze the cake for at least 4 hours or until firm.
- Serve and enjoy!

- For a more decadent topping, add whipped cream or additional chopped cherries before serving.
- Ensure that the ice cream softens slightly before spreading for a smoother layer.
