These vibrant and fun pinwheel cookies are perfect for the holiday season. With a buttery dough and colorful red and green swirls, they add a festive touch to your Christmas cookie platter.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1/4 tsp salt
- Red and green food coloring
Instructions
- In a large bowl, cream together the softened butter and granulated sugar until smooth and fluffy.
- Beat in the egg and vanilla extract.
- Gradually add the flour and salt, mixing until the dough comes together.
- Divide the dough in half. Add red food coloring to one half and green food coloring to the other half. Mix until the dough is evenly colored.
- Roll out each colored dough on a lightly floured surface into a rectangle about 1/8 inch thick.
- Place the red dough on top of the green dough and carefully roll them into a log shape.
- Wrap the dough log in plastic wrap and chill in the refrigerator for at least 1 hour.
- Preheat the oven to 350°F (175°C).
- Slice the chilled dough log into cookies about 1/4 inch thick and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on a wire rack before serving.
Notes
- For added decoration, you can sprinkle the cookies with sugar before baking.
- Be sure to chill the dough to make slicing easier and get clean, neat pinwheel shapes.
