These vibrant and fun pinwheel cookies are perfect for the holiday season. With a buttery dough and colorful red and green swirls, they add a festive touch to your Christmas cookie platter.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/4 tsp salt
  • Red and green food coloring

Instructions

  • In a large bowl, cream together the softened butter and granulated sugar until smooth and fluffy.
  • Beat in the egg and vanilla extract.
  • Gradually add the flour and salt, mixing until the dough comes together.
  • Divide the dough in half. Add red food coloring to one half and green food coloring to the other half. Mix until the dough is evenly colored.
  • Roll out each colored dough on a lightly floured surface into a rectangle about 1/8 inch thick.
  • Place the red dough on top of the green dough and carefully roll them into a log shape.
  • Wrap the dough log in plastic wrap and chill in the refrigerator for at least 1 hour.
  • Preheat the oven to 350°F (175°C).
  • Slice the chilled dough log into cookies about 1/4 inch thick and place them on a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on a wire rack before serving.

Notes

  • For added decoration, you can sprinkle the cookies with sugar before baking.
  • Be sure to chill the dough to make slicing easier and get clean, neat pinwheel shapes.
