- 1/2 cup packed brown sugar
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 24 mini peanut butter cups, unwrapped
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, whisk together flour, baking soda, and salt.
- In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add peanut butter, egg, and vanilla extract to the creamed mixture, and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Shape the dough into 24 balls and place them in an ungreased mini muffin tin.
- Bake for 8-10 minutes or until the edges are golden brown.
- Remove from the oven and immediately press a mini peanut butter cup into the center of each cookie. Let cool before serving.

- Be careful not to overbake; cookies should still be soft when you press in the peanut butter cups.
