  • 1/2 cup packed brown sugar

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 24 mini peanut butter cups, unwrapped

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a small bowl, whisk together flour, baking soda, and salt.
  • In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Add peanut butter, egg, and vanilla extract to the creamed mixture, and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Shape the dough into 24 balls and place them in an ungreased mini muffin tin.
  • Bake for 8-10 minutes or until the edges are golden brown.
  • Remove from the oven and immediately press a mini peanut butter cup into the center of each cookie. Let cool before serving.
