Ingredients

  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 large egg
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix together flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat cream cheese until smooth. Add melted butter, milk, egg, lemon zest, and lemon juice. Mix until well combined.
  4. Gradually add wet ingredients to dry ingredients, stirring until just combined.
  5. Spoon batter into muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
