- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup cream cheese, softened
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1 large egg
- Zest of 1 lemon
- Juice of 1 lemon
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix together flour, sugar, baking powder, and salt.
- In a separate bowl, beat cream cheese until smooth. Add melted butter, milk, egg, lemon zest, and lemon juice. Mix until well combined.
- Gradually add wet ingredients to dry ingredients, stirring until just combined.
- Spoon batter into muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
