Description

Light, refreshing, and bursting with citrus flavor, Lemon Custard Cake is the perfect dessert for any occasion. With a delicate, airy cake top and a smooth, creamy custard layer at the bottom, this dessert strikes the ideal balance between sweetness and tartness. It’s simple to make yet incredibly satisfying, making it a must-try for lemon lovers and dessert enthusiasts alike.

Ingredients

Scale
  • 1 cup granulated sugar

  • 1/2 cup all-purpose flour

  • 1/4 teaspoon salt

  • 1 teaspoon baking powder

  • 3 large eggs, separated

  • 1 1/2 cups milk

  • 1/4 cup fresh lemon juice (about 2 lemons)

  • Zest of 1 lemon

  • 1/4 cup melted butter

  • 1 teaspoon vanilla extract

  • Powdered sugar (for dusting)

Instructions

  • Preheat the oven: Set your oven to 325°F (165°C). Grease a 9-inch round baking dish or pie dish.

  • Prepare dry ingredients: In a medium bowl, whisk together the sugar, flour, salt, and baking powder.

  • Mix wet ingredients: In a separate bowl, whisk the egg yolks with the milk, lemon juice, lemon zest, melted butter, and vanilla extract.

  • Combine the mixtures: Slowly combine the wet ingredients into the dry ingredients, whisking until smooth.

  • Whisk the egg whites: In another bowl, beat the egg whites until stiff peaks form.

  • Fold the egg whites: Gently fold the whipped egg whites into the batter. Be careful not to deflate the egg whites—this step will help create the cake-like top.

  • Bake: Pour the batter into the prepared baking dish and bake for 40-45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

  • Cool and serve: Let the cake cool for about 10 minutes. Dust with powdered sugar before serving.

Notes

  • Tartness: Adjust the amount of lemon juice based on how tart you like your dessert. You can also add a bit more zest for a more pronounced lemon flavor.

  • Serving suggestion: Serve with fresh whipped cream or a scoop of vanilla ice cream for extra richness.

  • Make ahead: This cake can be made a day ahead and stored in the fridge, as it gets even better after chilling.

  • Variations: For a twist, try adding a handful of fresh berries on top, such as raspberries or blueberries.
