These no-bake energy balls are a perfect sweet treat, combining the richness of pecans, the sweetness of dates, and the deep flavor of cocoa and maple syrup. A touch of vanilla and optional shredded coconut adds an extra layer of flavor.


Ingredients

  • 1 cup pitted dates
  • 2 tbsp cocoa powder
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/4 cup shredded coconut (optional)

Instructions

  • In a food processor, combine the pecans and dates. Pulse until finely chopped and well combined.
  • Add cocoa powder, maple syrup, vanilla extract, and a pinch of salt. Process again until the mixture sticks together.
  • Roll the mixture into small balls, about 1 inch in diameter.
  • Optional: Roll the balls in shredded coconut for added texture and flavor.
  • Refrigerate for 30 minutes before serving to allow the balls to firm up.
