Instructions
- In a food processor, combine the pecans and dates. Pulse until finely chopped and well combined.
- Add cocoa powder, maple syrup, vanilla extract, and a pinch of salt. Process again until the mixture sticks together.
- Roll the mixture into small balls, about 1 inch in diameter.
- Optional: Roll the balls in shredded coconut for added texture and flavor.
- Refrigerate for 30 minutes before serving to allow the balls to firm up.
