For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Peanut Butter Frosting:

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, combine flour, sugar, cocoa powder, baking powder, and salt. Add milk, oil, eggs, and vanilla. Beat on medium speed until well combined.
  • Stir in boiling water until the batter is smooth. Pour the batter evenly into the prepared pans.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes, then transfer the cakes to wire racks to cool completely.
  • In a medium bowl, beat together the peanut butter and butter until smooth. Gradually add powdered sugar, milk, and vanilla, beating until the frosting is creamy.
  • Place one cake layer on a serving plate, spread half of the peanut butter frosting over the top. Place the second layer on top and spread the remaining frosting evenly on top.

Notes
