- 1/2 cup unsalted butter, room temperature
- 1/2 cup packed light-brown sugar
- 2 large eggs
- 1 cup unsulfured molasses
- 1/2 cup hot water
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
- In a large bowl, using an electric mixer, beat butter and brown sugar until light and fluffy.
- Beat in eggs and molasses until smooth.
- Gradually beat in the flour mixture, alternating with hot water, beginning and ending with the flour mixture.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
