Description

These rich, fudgy brownies are elevated with the sweet, tangy flavor of fresh strawberries. Topped with freeze-dried strawberries or a drizzle of melted dark chocolate, they’re the perfect treat for any occasion!

  • 250g unsalted butter, melted (1 cup)

  • 200g semisweet chocolate, chopped (7.5 oz)

  • 4 large eggs, room temperature

  • 360g caster sugar (1 1/2 cups)

  • 65g flour (1/2 cup)

  • 80g cocoa powder (1 cup), Dutch-processed

  • 1 tsp baking powder

  • Pinch of salt

  • 68 strawberries, thinly sliced

  • Freeze-dried strawberries, optional (for sprinkling)

  • Melted dark chocolate, optional (for drizzling)


Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×9-inch square baking pan or line it with parchment paper.

  • In a medium saucepan, melt the unsalted butter and semisweet chocolate over low heat, stirring until smooth. Remove from the heat and allow it to cool slightly.

  • In a large bowl, whisk together the eggs and caster sugar until smooth and slightly thickened.

  • Slowly pour the melted butter and chocolate mixture into the eggs and sugar, stirring constantly.

  • In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  • Gently fold in the sliced fresh strawberries.

  • Pour the brownie batter into the prepared baking pan and spread it evenly.

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.

  • Let the brownies cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

  • Optional: Drizzle with melted dark chocolate and sprinkle with freeze-dried strawberries for an extra indulgent touch.

Notes

  • For a more intense strawberry flavor, use freeze-dried strawberries in the batter in addition to fresh ones.

  • These brownies can be served warm or at room temperature.
