Instructions

  • Prepare the Lemons:
    Start by zesting the lemons and then juicing them. Be sure to remove any seeds from the juice. You should have about 1 cup of lemon juice, and the zest will give the jam extra flavor.
  • Combine Ingredients:
    In a large saucepan, combine the lemon juice, lemon zest, sugar, and water. Stir well to dissolve the sugar completely.
  • Cook the Jam:
    Bring the mixture to a boil over medium heat. Reduce the heat to a simmer and cook, stirring occasionally, for 25-30 minutes. The mixture should begin to thicken as the water evaporates. If using, stir in the vanilla extract at the end of the cooking time.
  • Test for Doneness:
