For the Caprese Topping:
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella, sliced or torn into pieces

- 2 tablespoons balsamic glaze (for drizzling)

Instructions
- In a bowl, whisk together the balsamic vinegar, olive oil, garlic, oregano, salt, pepper, and honey (if using) to make the marinade.
- Place the flank steak in a shallow dish or resealable plastic bag, and pour the marinade over the steak. Seal and refrigerate for at least 30 minutes to 2 hours, or overnight for more flavor.
- Preheat your grill or grill pan to medium-high heat. Remove the steak from the marinade and let it come to room temperature. Discard the marinade.
- Grill the flank steak for about 4-5 minutes per side, or until it reaches your desired level of doneness (for medium-rare, aim for 130°F internal temperature).
- Remove the steak from the grill and let it rest for 5 minutes before slicing thinly against the grain.
