- 1 lb beef stew meat, cut into cubes
- 2 tbsp curry powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can diced tomatoes
- 2 potatoes, peeled and diced
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the beef cubes and brown on all sides.
- Stir in the curry powder, onion, garlic, and ginger. Cook until fragrant.
- Add the diced tomatoes and potatoes. Season with salt and pepper.
- Pour in the coconut milk and bring to a simmer.
- Cover and cook for about 1 hour, or until the beef is tender.
- Serve hot over rice or with naan bread.
Notes
- If you prefer a thicker curry, you can mash some of the potatoes while cooking.
