  • 2 tbsp curry powder
  • 1 onion, chopped

  • 1 tbsp ginger, grated
  • 1 can diced tomatoes
  • 2 potatoes, peeled and diced
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  • In a large pot, heat some oil over medium heat.
  • Add the beef cubes and brown on all sides.
  • Stir in the curry powder, onion, garlic, and ginger. Cook until fragrant.
