Ingredients

  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the fettuccine pasta according to package instructions. Drain and set aside.
  • Season the chicken breasts with Cajun seasoning.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until no longer pink in the center, about 6-7 minutes per side. Remove from skillet and set aside.
  • In the same skillet, add the sliced bell peppers and onion. Cook until softened, about 5 minutes.
  • Stir in the heavy cream and Parmesan cheese. Cook until the sauce has thickened, about 5 minutes.
  • Slice the cooked chicken breasts and add them back to the skillet. Stir to combine.
  • Add the cooked fettuccine pasta to the skillet and toss to coat in the sauce.

Notes

  • You can adjust the level of Cajun seasoning to your preferred spice level.
  • For a lighter version, substitute heavy cream with half-and-half or a plant-based cream alternative.
