- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the fettuccine pasta according to package instructions. Drain and set aside.
- Season the chicken breasts with Cajun seasoning.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until no longer pink in the center, about 6-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Cook until softened, about 5 minutes.
- Stir in the heavy cream and Parmesan cheese. Cook until the sauce has thickened, about 5 minutes.
- Slice the cooked chicken breasts and add them back to the skillet. Stir to combine.
- Add the cooked fettuccine pasta to the skillet and toss to coat in the sauce.
Notes
- You can adjust the level of Cajun seasoning to your preferred spice level.
- For a lighter version, substitute heavy cream with half-and-half or a plant-based cream alternative.
