Description

This savory quiche features a crispy hash brown crust filled with creamy, cheesy goodness, crispy bacon, and a flavorful onion and chive filling. It’s the perfect dish for brunch, lunch, or dinner!

For the Hash Brown Crust:

  • 20 ounces frozen hash browns, thawed

  • 1/2 cup white cheddar cheese, shredded

  • 1/2 teaspoon salt

  • 1/4 teaspoon cracked black pepper

For the Filling:

  • 2 tablespoons unsalted butter

  • 1/2 onion, thinly sliced

  • 6 large eggs, lightly beaten

  • 1/2 cup heavy cream (or whole milk)

  • 4 rashers bacon, crispy cooked and crumbled (a rasher is a slice of bacon)

  • 1 cup white cheddar cheese, shredded

  • 1 tablespoon chives, thinly sliced (plus more for garnish)

  • Salt and pepper, to taste


Instructions

  • Prepare the Hash Brown Crust:
    Preheat your oven to 400°F (200°C).
    In a large bowl, mix the thawed hash browns with shredded white cheddar, salt, and pepper.
    Press the mixture into the bottom and up the sides of a 9-inch pie dish or tart pan to form a crust.
    Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and crispy. Remove from the oven and set aside.

  • Prepare the Filling:
    While the crust is baking, melt the butter in a skillet over medium heat. Add the sliced onion and sauté for 5-7 minutes, until the onions are soft and translucent.
    In a mixing bowl, whisk the eggs and heavy cream (or milk) together. Season with salt and pepper.
    Stir in the crumbled bacon, shredded cheddar cheese, and sautéed onions. Add the chives and mix until well combined.

  • Assemble the Quiche:
    Pour the egg mixture into the pre-baked hash brown crust.
    Lower the oven temperature to 375°F (190°C) and bake the quiche for 30-35 minutes, or until the center is set and the top is lightly golden.

 

  • Garnish and Serve:
    Allow the quiche to cool for 5-10 minutes before slicing. Garnish with additional chives, if desired, and serve warm.

Notes

  • If you want to add more vegetables, sauté spinach, bell peppers, or mushrooms along with the onions.

  • For a lighter option, use half-and-half or milk instead of heavy cream.

 

  • You can make this quiche ahead of time and store it in the fridge for up to 3 days. Reheat before serving.
