- 1 whole chicken
- 2 lemons
- 4 cloves of garlic
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs (rosemary, thyme, parsley)
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken and pat it dry with paper towels.
- Season the chicken generously with salt and pepper, both inside and out.
- Cut one lemon into quarters and stuff it inside the cavity of the chicken along with the garlic cloves and fresh herbs.
- Squeeze the juice of the second lemon over the chicken and drizzle with olive oil.
- Place the seasoned chicken in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving and serving.
Notes
- You can use any combination of fresh herbs such as thyme, rosemary, and parsley for added flavor.
- If you prefer extra crispy skin, increase the oven temperature to 400°F for the last 10-15 minutes of roasting.
