Description

This Lemon Herb Roasted Chicken is a succulent and flavorful dish, with a crispy golden skin and tender, juicy meat infused with the aromatic essence of lemon, garlic, and fresh herbs. A perfect centerpiece for a comforting meal!


Ingredients

  • 1 whole chicken
  • 2 lemons
  • 4 cloves of garlic
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (rosemary, thyme, parsley)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Rinse the chicken and pat it dry with paper towels.
  • Season the chicken generously with salt and pepper, both inside and out.
  • Cut one lemon into quarters and stuff it inside the cavity of the chicken along with the garlic cloves and fresh herbs.
  • Squeeze the juice of the second lemon over the chicken and drizzle with olive oil.
  • Place the seasoned chicken in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 10 minutes before carving and serving.

Notes

  • You can use any combination of fresh herbs such as thyme, rosemary, and parsley for added flavor.
  • If you prefer extra crispy skin, increase the oven temperature to 400°F for the last 10-15 minutes of roasting.
