- 1 cup long-grain white rice
- 1 1/2 cups water
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup sweet chili sauce
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a casserole dish, combine the rice and water.
- Place the diced chicken on top of the rice.
- Pour the sweet chili sauce over the chicken.
- Add the diced bell pepper and onion on top.
- Season with salt and pepper.
- Cover the dish with foil and bake for 45 minutes.
- Remove foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 15 minutes.
- Garnish with chopped green onions before serving.
