Ingredients

  • 1 cup long-grain white rice
  • 1 1/2 cups water
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup sweet chili sauce
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • In a casserole dish, combine the rice and water.
  • Place the diced chicken on top of the rice.
  • Pour the sweet chili sauce over the chicken.
  • Add the diced bell pepper and onion on top.
  • Season with salt and pepper.
