  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 can diced tomatoes
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Olive oil

Instructions

  • Preheat oven to 400°F (200°C).
  • In a bowl, mix together Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
  • Coat each chicken breast in the Parmesan mixture, pressing gently to adhere. Place the coated chicken breasts on a baking sheet.
  • Bake for 25-30 minutes, or until the chicken is golden and cooked through (internal temperature should reach 165°F).
  • While the chicken is baking, heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant, about 3-4 minutes.
  • Stir in the diced tomatoes, oregano, and red pepper flakes. Bring the mixture to a simmer for 5-7 minutes.
  • Add the cooked rice to the pan, mixing it with the tomato mixture. Cook for an additional 3-5 minutes, or until the rice is heated through.
  • Serve the baked Parmesan chicken over the tomato rice and enjoy!

Notes

  • Feel free to adjust the amount of red pepper flakes to suit your spice preference.
  • For extra flavor, sprinkle more Parmesan cheese on top of the rice when serving.
