  • 4 medium sweet potatoes

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 2 cups fresh spinach, chopped

  • 1 cup mushrooms, sliced

  • ½ cup crumbled feta cheese

  • Salt and pepper to taste

  • Optional: garlic, herbs, or a drizzle of balsamic vinegar for extra flavor


Instructions

  • Roast the Sweet Potatoes: Preheat the oven to 400°F (200°C). Prick the sweet potatoes with a fork and place them on a baking sheet. Roast for 40-50 minutes, or until tender.

  • Prepare the Filling: While the potatoes are roasting, heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté for about 5 minutes, until softened.

  • Add the sliced mushrooms to the pan and cook for another 5-7 minutes, until the mushrooms release their moisture and become tender.

  • Add the chopped spinach and cook for 2-3 minutes until wilted. Season with salt and pepper to taste.

  • Stuff the Sweet Potatoes: Once the sweet potatoes are done roasting, carefully slice them open, creating a pocket in the middle.

  • Spoon the spinach and mushroom mixture into each sweet potato, topping with crumbled feta cheese.

 

  • Serve: Serve hot, optionally drizzle with balsamic vinegar or sprinkle with fresh herbs.

Notes

For a vegan option, substitute feta with a plant-based cheese or omit it altogether.

If you prefer a sweeter flavor, try adding a drizzle of maple syrup on top before serving.
