Instructions

Roast the Sweet Potatoes: Preheat the oven to 400°F (200°C). Prick the sweet potatoes with a fork and place them on a baking sheet. Roast for 40-50 minutes, or until tender.

Prepare the Filling: While the potatoes are roasting, heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté for about 5 minutes, until softened.

Add the sliced mushrooms to the pan and cook for another 5-7 minutes, until the mushrooms release their moisture and become tender.
