  • 1 red bell pepper (sliced)

Instructions

  • Prepare the marinade:
    In a small bowl, combine the teriyaki sauce, olive oil, honey (if using), and minced garlic. Mix well to combine.
  • Marinate the chicken:
    Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and let it marinate in the fridge for at least 30 minutes, or up to 2 hours for more flavor.
  • Prepare the foil packets:
    Preheat the grill to medium heat or the oven to 400°F (200°C). Cut 4 large pieces of aluminum foil, each large enough to hold a chicken breast, vegetables, and pineapple.
  • Assemble the packets:
    Place one marinated chicken breast in the center of each piece of foil. Top the chicken with a handful of pineapple chunks, bell pepper slices, and onion slices. Drizzle a little extra teriyaki sauce over the top, if desired. Season with a pinch of salt and pepper.
  • Seal the packets:
