Ingredients
Scale
- 4 boneless, skinless chicken breasts (or thighs)
- 1 cup pineapple chunks (fresh or canned)
- ½ cup teriyaki sauce (store-bought or homemade)
- 1 tbsp olive oil
- 1 tbsp honey (optional for extra sweetness)
- 2 cloves garlic (minced)
- 1 red bell pepper (sliced)
- 1 small onion (sliced)
- 2 tsp sesame seeds (optional)
- 2–3 green onions (sliced for garnish)
- Salt and pepper, to taste
Instructions
- Prepare the marinade:
In a small bowl, combine the teriyaki sauce, olive oil, honey (if using), and minced garlic. Mix well to combine. - Marinate the chicken:
Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and let it marinate in the fridge for at least 30 minutes, or up to 2 hours for more flavor. - Prepare the foil packets:
Preheat the grill to medium heat or the oven to 400°F (200°C). Cut 4 large pieces of aluminum foil, each large enough to hold a chicken breast, vegetables, and pineapple. - Assemble the packets:
Place one marinated chicken breast in the center of each piece of foil. Top the chicken with a handful of pineapple chunks, bell pepper slices, and onion slices. Drizzle a little extra teriyaki sauce over the top, if desired. Season with a pinch of salt and pepper. - Seal the packets:
Fold the sides of the foil over the chicken and vegetables, sealing the packet tightly to lock in all the juices. - Cook the packets:
Place the foil packets on the grill or in the oven. Grill for 25-30 minutes, or bake in the oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender. - Finish and serve:
Carefully open the foil packets (watch for steam!) and sprinkle with sesame seeds and sliced green onions for garnish. Serve with steamed rice or a side of your choice.
Notes
- You can easily customize this recipe by adding other vegetables like zucchini, mushrooms, or carrots to the foil packets.
- If you prefer, you can use chicken thighs for a juicier option.
- For a crispier finish, place the foil packets under the broiler for a couple of minutes at the end of cooking.
