Description

A hearty and flavorful dish combining ground beef, sweet potatoes, bell pepper, onion, mushrooms, and spinach, all seasoned with taco spices. Perfect for breakfast, brunch, or a satisfying dinner.

  • For the Hash:

    • 1 lb ground beef

    • 3 tablespoons taco seasoning (homemade or store-bought)

    • ½ cup water

    • 1 tablespoon olive oil or avocado oil

    • 1 medium sweet potato, peeled and cut into small cubes (about 3 cups)

    • 1 sweet bell pepper, diced (red, yellow, or orange)

    • ½ medium red onion, diced

    • 2 cups diced mushrooms, chopped

    • 23 cups spinach, roughly chopped

  • Optional Toppings:

    • Fresh cilantro

    • Green onions

    • Avocado

    • Guacamole

    • Jalapeños

    • Fried egg

    • Sour cream

    • Mexican blend cheese or cotija cheese (omit sour cream and cheese if dairy-free or Whole30)


Instructions

  • In a skillet over medium-high heat, add ground beef, taco seasoning, and water. Cook until beef is browned. Remove beef from pan and set aside.

  • In the same skillet, add ½ tablespoon of oil and heat over medium-high until melted and hot. Add diced sweet potatoes, season with salt and pepper, and sauté for about 10–15 minutes or until just before fully cooked through, stirring occasionally. Add more oil as needed.

  • Add the remaining ½ tablespoon of oil, followed by the onions, bell pepper, and mushrooms. Sauté for about 3 minutes or until vegetables are tender.

  • Fold in spinach and cooked beef. Continue to cook until heated through and spinach is wilted.

  • Serve with optional toppings of choice

Notes

For a Whole30-compliant version, ensure the taco seasoning is Whole30-friendly and omit any non-compliant toppings.

This dish can be customized with additional vegetables or protein sources as desired.
