Description

This Traeger Pizza Meatloaf is the ultimate comfort food with a pizza twist! Packed with seasoned ground beef, Italian sausage, pepperoni, and gooey mozzarella, it’s baked to perfection on your Traeger grill. Topped with a flavorful homemade tomato sauce, this meatloaf is sure to impress!

For the Meatloaf:

  • 2 pounds ground beef (80/20)

  • 1 pound Italian sausage

  • 2 large eggs

  • 1/2 cup Italian breadcrumbs

  • 1 teaspoon Italian seasoning

  • 1 teaspoon salt

For the Filling:

  • 12 slices pepperoni

  • 4 slices fresh mozzarella

  • 1 (28 oz) can San Marzano tomatoes, separated (for sauce and filling)

  • 4 fresh basil leaves

For the Sauce:

  • 1/8 cup olive oil

  • 1 tablespoon fresh garlic, minced

  • 1/2 cup crushed San Marzano tomatoes (for sauce)

  • 1/2 teaspoon salt

  • 1 teaspoon oregano

  • 1/2 teaspoon sugar (optional, for sweetness)


Instructions

  • Prepare the meatloaf mixture: In a large bowl, combine the ground beef, Italian sausage, eggs, breadcrumbs, Italian seasoning, and salt. Mix until just combined.

  • Shape the meatloaf: On a large sheet of parchment paper or aluminum foil, form the meat mixture into a loaf shape. Flatten the top slightly to create a base for the filling.

  • Add the filling: Layer the pepperoni slices and fresh mozzarella across the center of the meatloaf. Carefully fold the sides of the meatloaf around the filling, sealing it inside.

  • Preheat the Traeger: Preheat your Traeger grill to 375°F (190°C).

  • Cook the meatloaf: Place the meatloaf on the grill and cook for 50–60 minutes or until the internal temperature reaches 160°F (71°C). Be sure to check the temperature using a meat thermometer.

  • Make the sauce: While the meatloaf is cooking, heat olive oil in a small pan over medium heat. Add garlic and sauté for 1–2 minutes. Add crushed San Marzano tomatoes, salt, oregano, and sugar (if using). Stir and let simmer for 10–15 minutes until thickened.

 

  • Serve: Once the meatloaf is cooked through, remove it from the grill and let it rest for 10 minutes. Slice and top with fresh basil and a generous spoonful of the homemade sauce.

Notes

You can substitute turkey or chicken for the ground beef for a leaner version.

For extra flavor, top the meatloaf with a bit of grated Parmesan before baking.

If you don’t have a Traeger grill, you can bake the meatloaf in a regular oven at 375°F (190°C) for the same cooking time.

If you prefer a spicier kick, add some crushed red pepper flakes to the sauce or inside the meatloaf mixture.
