This Western Omelet Quiche combines the flavors of a classic Western omelet with the richness of a quiche, making it the perfect breakfast or brunch dish. Packed with eggs, ham, bell peppers, onions, and cheese, it’s a hearty and delicious meal that’s sure to please a crowd.

  • 1 pre-made pie crust (or homemade if preferred)

  • 6 large eggs

  • 1/2 cup milk (whole or skim)

  • 1 cup cooked ham, diced

  • 1/2 cup red bell pepper, diced

  • 1/2 cup green bell pepper, diced

  • 1/4 cup onion, finely chopped

  • 1 cup shredded cheddar cheese

  • 1/4 tsp garlic powder

  • Salt and pepper to taste

  • 1 tbsp olive oil (for sautéing the vegetables)

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  • Preheat the oven: Preheat your oven to 375°F (190°C). Place your pie crust in a 9-inch pie dish and set aside.

  • Sauté the vegetables: In a small skillet, heat the olive oil over medium heat. Add the bell peppers and onions, and sauté for about 3-5 minutes, or until they are softened. Remove from heat and set aside to cool slightly.

  • Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper. Stir in the cooked ham, sautéed vegetables, and shredded cheese.

  • Fill the crust: Pour the egg mixture into the prepared pie crust, spreading it evenly.

  • Bake: Bake for 35-40 minutes, or until the quiche is golden and set in the center. You can check if it’s done by inserting a toothpick into the center — it should come out clean.

 

  • Cool and serve: Let the quiche cool for about 10 minutes before slicing and serving. Garnish with fresh parsley if desired.

Notes

For a lighter version, you can use a lower-fat milk and reduce the amount of cheese.

You can swap the ham for cooked bacon or sausage if you prefer.

This quiche can be made ahead of time and stored in the refrigerator for up to 3 days.
