- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1/4 cup white vinegar
- 2 tablespoons Dijon mustard
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chopped celery
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped red onion
- 2 hard-boiled eggs, chopped
Instructions
- Cook macaroni according to package directions. Drain and rinse with cold water.
- In a large bowl, mix together mayonnaise, vinegar, mustard, sugar, salt, and pepper.
- Add cooked macaroni, celery, bell peppers, onion, and eggs to the bowl. Mix until well combined.
- Cover and refrigerate for at least 2 hours before serving.
