  • 1 cup cherry tomatoes, halved

  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley or basil (optional, for garnish)

Instructions

  • Cook the pasta according to package instructions. Drain and rinse under cold water to stop the cooking process.
  • In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, garlic powder, salt, and pepper.
