- 1 cup grilled chicken, diced
- 1 cup corn kernels
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the mayonnaise, sour cream, lime juice, and chili powder.
- Add the cooked rice, grilled chicken, and corn kernels to the bowl. Stir well to combine.
