- 1/4 cup of red onion, finely chopped
- 1/4 cup of black olives, sliced
- 1/4 cup of cherry tomatoes, halved
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, combine the drained tuna, chopped artichoke hearts, red onion, black olives, and halved cherry tomatoes.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine evenly.
- Garnish with fresh parsley before serving.
