    • 2 large chicken breasts (boneless, skinless)

    • 1/2 red onion, thinly sliced
    • 1 pint cherry tomatoes, halved
    • 1/4 cup Kalamata olives, pitted and sliced (optional)
    • 1/4 cup feta cheese, crumbled (optional)
  • For the Tzatziki dressing:
    • 1 cup Greek yogurt
    • 1/2 cucumber, grated and excess water squeezed out
    • 2 tablespoons fresh lemon juice
    • 2 cloves garlic, minced
    • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
    • 1 tablespoon olive oil
    • Salt and pepper, to taste

Instructions

  • Cook the Chicken:
    • Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill or pan-sear the chicken over medium-high heat for about 6-7 minutes per side, or until fully cooked through (internal temperature of 165°F or 74°C). Let the chicken rest for a few minutes before slicing it into thin strips or cubes.
  • Prepare the Tzatziki Dressing:
    • In a small bowl, combine the Greek yogurt, grated cucumber, lemon juice, garlic, fresh dill, olive oil, salt, and pepper. Mix well until smooth and creamy.
  • Assemble the Salad:
    • In a large bowl, combine the mixed greens, sliced cucumber, red onion, cherry tomatoes, olives, and feta cheese (if using).
    • Add the sliced chicken on top of the salad.
  • Dress the Salad:
    • Drizzle the tzatziki dressing over the salad and toss gently to coat all the ingredients.
  • Serve:
    • Serve immediately or chill for 10-15 minutes before serving to allow the flavors to meld. Garnish with additional dill or feta cheese, if desired.
