- 2 large chicken breasts (boneless, skinless)

- 1 pint cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and sliced (optional)
- 1/4 cup feta cheese, crumbled (optional)
- For the Tzatziki dressing:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and excess water squeezed out
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- Cook the Chicken:
- Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill or pan-sear the chicken over medium-high heat for about 6-7 minutes per side, or until fully cooked through (internal temperature of 165°F or 74°C). Let the chicken rest for a few minutes before slicing it into thin strips or cubes.
- Prepare the Tzatziki Dressing:
- In a small bowl, combine the Greek yogurt, grated cucumber, lemon juice, garlic, fresh dill, olive oil, salt, and pepper. Mix well until smooth and creamy.
- Assemble the Salad:
- In a large bowl, combine the mixed greens, sliced cucumber, red onion, cherry tomatoes, olives, and feta cheese (if using).
- Add the sliced chicken on top of the salad.
- Dress the Salad:
- Drizzle the tzatziki dressing over the salad and toss gently to coat all the ingredients.
- Serve:
- Serve immediately or chill for 10-15 minutes before serving to allow the flavors to meld. Garnish with additional dill or feta cheese, if desired.
